Warm Salad Of Jersey Royals With Goats Cheese, Pine Nuts And Fresh Figs

This is one of those salads you can throw together at the last minute when everything else is prepared. It’s an interesting combination that works surprisingly well with roast chicken or even grilled fish. Really simple but very tasty.

Warm sslad of Jersey Royals with Goats Cheese, Pine nuts and Fresh Figs


• 900g of Jersey Royal potatoes
• 150g of goat's cheese
• 4 figs
• 50g of pine nuts
• salt
• black pepper  


Place the potatoes in a large saucepan and cover with cold salted water. Bring to the boil, simmer and cook until you can pierce with a knife

While the potatoes are cooking break the goats cheese into nugget-sized pieces and cut the figs into quarters. Put both in the fridge until needed

Once the potatoes are cooked, drain well and place in a serving bowl

Season, sprinkle the goats cheese over the warm potatoes, arrange the figs over the top and finish with the pine nuts.
